JOB OVERVIEW:

Manage and optimize the cost in the food and beverage departments. Manage inventory, track food and beverage variances, implement strategies to reduce waste and spoilage. Prepare cost analysis and enhance profitability.

KEY RESPONSIBILITIES:

- Manage the purchasing of all food and beverage items. Ensure that the highest quality product is purchased at the best possible price. Ensure that orders are placed properly and received in a timely manner.

- Supervise food and beverage storerooms and receiving areas and personnel. Ensure that all deliveries are to specifications in accordance with receiving sheets, purchase orders, pricing and weights.

- Implement and oversee systems for tracking inventory, including stock levels and expiration dates.

- Work closely with Accounting Department to ensure timely and accurately uploading invoices in our Accounts Payable system – Ottimate.

- Develop and implement cost control procedures and policies for the Food and Beverage department.

- Monitor and analyze food and beverage costs, including inventory management, purchasing, and recipe costing.

- Prepare detailed reports on food and beverage costs, highlighting variances and providing actionable insights for improvement.

- Collaborate with food and beverage teams to ensure adherence to portion control and waste management practices.

- Conduct regular audits of inventory and supplies to ensure accuracy and minimize losses.

- Assist in budget preparation and forecasting, providing input based on cost analysis.

- Train staff in cost control measures and the importance of maintaining budgetary compliance.

- Identify opportunities for cost reduction and efficiency improvements without compromising quality.

QUALIFICATIONS AND OTHER REQUIREMENTS:

- Associate’s degree in Food Service Management, Hotel and Restaurant Management, Hospitality, or related field is required. Bachelor’s Degree is preferred.

- Minimum 3 years of purchasing experience in food and beverage, culinary or related professional area. Proven experience in cost control and inventory management within the food and beverage industry.

- Experience with inventory management systems is required. Chef-Tech and/or Yellow Dog experience is preferred.

- Intermediate knowledge of Excel is required

- Strong analytical skills with proficiency in data analysis and reporting tools.

- Excellent attention to detail and organizational abilities.

- Excellent time management and organizational skills.

- Good communication skills and the ability to work collaboratively with diverse teams.

- Able to work independently and without supervision.

- Ability to balance multiple projects and changing priorities.

- Must schedule vacations during the off-season months.
