Description
This is a Swing Shift Position. Hours will be from 5:00pm to 3:30am.
Job Summary: The Smoke House Second supports the operation of smoke houses used in the smoking and curing of meats and other food products. They assist in maintaining equipment, monitoring processes, and ensuring the quality and safety of smoked products.
Key Responsibilities:

Equipment Operation: Assist in operating smoke houses and related equipment under the direction of the Smoke House Lead or supervisor.

Product Loading and Unloading: Load and unload products onto smoke house racks or trolleys, ensuring proper arrangement for even smoking and curing.

Process Monitoring: Monitor smoke house controls, including temperature, humidity, and smoke generation, to maintain optimal conditions for smoking and curing.

Quality Control: Conduct regular checks on smoked products for flavor, color, texture, and temperature. Report any deviations from quality standards to the supervisor.

Safety and Sanitation: Adhere to safety protocols and sanitation standards to prevent contamination and ensure food safety. Keep work area clean and organized.

Assist in Maintenance: Assist in cleaning and basic maintenance of smoke houses and associated equipment. Notify maintenance staff of any equipment issues or malfunctions.

Inventory Management: Assist in monitoring inventory levels of smoking materials (e.g., wood chips, sawdust) and other supplies. Report shortages or discrepancies to the supervisor.

Documentation: Maintain accurate records of production activities, including batch logs, temperature charts, and inventory counts. Ensure all documentation is complete and up to date.
Qualifications
Skills and Qualifications:

High school diploma or equivalent; formal training in food processing or related field is a plus.

Previous experience in a food processing environment, preferably in smoke house operations.

Basic understanding of smoking and curing processes and equipment.
