Must have food handler's license
Have thorough knowledge of menus and the preparation required, according to hotel standards.
Proficiency in the following cooking techniques: charbroiling, poaching, deep-frying, saut�, braising, roasting, and par-cooking.
Recognize quality standards for fresh vegetables, fish, dairy, and meat products.
Knowledge of herbs and spices and proper use of each.
Maintain a clean and sanitary environment with knowledge of proper handling, storage, and sanitation.
Prepare food for Banquets, as required, following specifications on Banquet Event Orders.
Prepare and service food for the Metro Cafe and food truck as specified by the Chef or kitchen supervisor.
Breakdown buffets and kitchen line, storing food and equipment properly at the end of each meal period.
Work banquet food station as scheduled by the chef or kitchen supervisor.
Follow all Health Department and company regulations in regard to food and storage standards and safety.
Expected to maintain a personal appearance and dress appropriate for the professional setting of the employer.
Occasional lifting up to 23 kg., repetitive arm, hand and finger movements,
Occasional bending and reaching
Ability to stand for long periods of time
Will be exposed to hot and cold temperatures, such as when working near ovens or retrieving food from freezers
Manual dexterity required to use knives and kitchen appliance
Currently enrolled in a Culinary Arts program or related Food Services Management program
Minimum 1 year of kitchen experience
Demonstrated knowledge of food and catering trends, quality, production, and sanitation controls.
Knowledge of methods and procedures for serving food, principles of sanitation, and principles of safe food handling required.
