About Buona Beef
Buona Beef is Chicago’s iconic Italian beef sandwich brand — known for slow-roasted beef, dipped sandwiches, Italian sausage, and a passionate fanbase built over decades. This Oak Creek location will be the brand’s newest franchise, bringing Buona’s legendary flavors to the Milwaukee market for the first time, with a fast casual format and drive-thru service designed for speed, quality, and a great guest experience.
This is an exciting ground-floor opportunity for the right GM: you’ll help build this location from scratch, shape its culture, and grow with the brand.
Position Overview
We are seeking a dynamic, experienced, and results-driven General Manager to lead all aspects of our Oak Creek restaurant. The ideal candidate is passionate about food and hospitality, thrives in a fast-paced environment, and has a proven track record of building high-performing teams, delivering exceptional guest experiences, and consistently hitting operational and financial targets.
As the General Manager, you will be the leader of this location from pre-opening through ongoing operations. You will hire and develop your management team and crew, implement Buona Beef’s brand standards, and serve as the primary liaison between the restaurant and the franchise owner.
Key Responsibilities
Pre-Opening (First 4–8 Weeks)
• Lead crew hiring, onboarding, and training in advance of opening day
• Coordinate with the franchise owner on vendor setup, equipment installation, and systems configuration
• Complete required Buona Beef corporate training and brand certification
• Conduct mock service shifts and training runs to prepare the team for opening
Operational Leadership
• Oversee all day-to-day restaurant operations, ensuring adherence to Buona Beef brand standards and franchise policies
• Maintain exceptional standards of cleanliness, food safety, and sanitation always
• Implement and refine workflows for both in-restaurant and drive-thru service to maximize speed and quality
• Monitor inventory levels; manage supply orders and vendor relationships to ensure consistent stock
• Ensure proper use and maintenance of all equipment, POS systems, and technology platforms
Staff Management & Development
• Recruit, hire, and train team members across all positions, including Assistant Managers and Shift Leads
• Build and maintain an effective scheduling system that meets operational needs while controlling labor costs
• Provide regular coaching, recognition, and constructive feedback to develop team members professionally
• Address performance issues promptly and fairly, in accordance with company and franchise policies
• Foster a positive, inclusive, high-energy team culture consistent with the Buona Beef brand
Guest Experience
• Champion an exceptional guest experience on every visit — in the dining room, at the counter, and through the drive-thru
• Respond to guest inquiries, complaints, and feedback professionally and promptly
• Monitor guest satisfaction metrics and implement action plans to continuously improve scores
• Drive community engagement and local marketing efforts to build brand awareness in the Oak Creek market
Financial Management
• Own the location’s P&L: monitor sales performance, labor cost %, food cost %, and controllable expenses
• Prepare and review financial reports to identify trends and opportunities for improvement
• Control costs proactively — manage food and labor expenses without sacrificing quality or service
• Collaborate with the franchise owner on budgeting, forecasting, and strategic planning
Compliance & Safety
• Ensure full compliance with all local, state, and federal health, safety, and sanitation regulations
• Conduct regular inspections to identify and address potential hazards or violations
• Maintain current knowledge of Wisconsin food safety regulations and industry best practices
• Ensure all team members are properly trained on food safety protocols
Qualifications
Required
• 3+ years of General Manager experience in QSR, fast casual, or full-service restaurant
• Proven track record managing a high-volume location ($3M+ annual revenue preferred)
• Demonstrated success hiring, training, and retaining restaurant staff
• Strong P&L literacy — ability to read, analyze, and act on financial reports
• ServSafe Manager Certification (or willingness to obtain prior to opening)
• Flexible availability including evenings, weekends, and holidays
• High school diploma or equivalent required
Preferred
• Experience opening a new restaurant location from scratch
• Franchise restaurant background (familiarity with brand standards and corporate relationships)
• Bachelor’s degree in Hospitality Management, Business, or a related field
• Familiarity with QSR technology — POS systems, scheduling platforms, inventory tools
• Bilingual (English/Spanish) a plus
Compensation & Benefits
Base Salary $62,000 – $70,000 / year (commensurate with experience)
Performance Bonus Up to 10–15% of base salary, tied to sales, labor cost, and guest satisfaction targets
