PM Kitchen Manager (Evening Kitchen Lead)

Position Summary
The PM Kitchen Manager is responsible for leading all back-of-house operations during evening service. This role ensures smooth execution, high food quality, team accountability, and a clean, organized kitchen. You’ll act as the on-the-ground leader during peak hours—driving speed, consistency, and a great team culture. We take our food seriously, but not ourselves. We’re building something fun and community-driven, and we want leaders who bring energy, accountability, and a little personality to the kitchen.

Key Responsibilities

Service Leadership

  • Lead and manage all kitchen operations during PM service
  • Expedite orders and ensure ticket times meet standards
  • Maintain food quality, consistency, and presentation
  • Troubleshoot issues in real-time during high-volume service

Team Management

  • Supervise, coach, and develop line cooks and prep staff
  • Set clear expectations and hold team accountable to standards
  • Assist with training new hires and reinforcing systems
  • Foster a positive, respectful, high-performance culture

Operations & Execution

  • Ensure prep is completed and stocked for service
  • Manage station setup, organization, and breakdown
  • Monitor waste and portion control
  • Enforce recipes, systems, and kitchen standards

Food Safety & Cleanliness

  • Maintain strict adherence to food safety and sanitation standards
  • Ensure proper food handling, labeling, and storage
  • Lead nightly cleaning and closing procedures

Inventory & Communication

  • Communicate product needs, shortages, and 86’d items
  • Assist with inventory tracking and ordering as needed
  • Coordinate with AM team for smooth shift transitions
Qualifications
  • 2+ years kitchen leadership experience (lead line cook, sous chef, or KM)
  • Strong understanding of high-volume service and ticket flow
  • Ability to stay calm and decisive under pressure
  • Solid knowledge of food safety standards
  • Strong communication and leadership skills
  • Availability for nights, weekends, and holidays
