Job Summary

Sprinkles Donut Shop is looking for a Bakery Operations Manager to oversee the day-to-day operations of our bakery production facility to ensure efficient production of high-quality baked goods and profitable performance. This role combines strong leadership, food production expertise, and business acumen. The manager will ensure smooth workflow from ingredient sourcing to final product delivery while maintaining strict food safety and quality standards.


Key Responsibilities

  • Oversee daily bakery production, including mixing, baking, finishing, packaging, and distribution of bread, pastries, cakes, and other items.
  • Develop and implement production schedules to meet demand, minimize waste, and optimize labor.
  • Manage inventory levels of ingredients, supplies, and packaging materials; place orders with vendors and negotiate costs.
  • Maintain rigorous food safety, sanitation, and quality control standards (HACCP, FDA, local health codes).
  • Lead, train, mentor, and supervise bakery staff (bakers, decorators, packers, and front-of-house team).
  • Monitor and control operational costs, labor expenses, waste, and profitability.
  • Ensure excellent customer service, handle complaints, and drive sales through product quality and merchandising.
  • Implement process improvements for efficiency, consistency, and scalability.
  • Manage equipment maintenance, repairs, and compliance with safety regulations.
  • Track key metrics (production output, sales, labor costs, waste percentages) and report to senior management.
  • Collaborate with other departments (sales, marketing, finance) for new product development and promotions.
  • Enforce company policies, hygiene standards, and workplace safety.


Required Qualifications and Skills

Education:

  • High school diploma or GED required.
  • Associate or Bachelor’s degree in Culinary Arts, Baking & Pastry, Food Science, Business Administration, or a related field is preferred.

Experience:

  • 3–5+ years of progressive experience in bakery production or food service operations.
  • At least 2 years in a supervisory or management role.

Technical & Soft Skills:

  • Strong knowledge of baking techniques, recipes, ingredients, and equipment operation.
  • Deep understanding of food safety regulations and best practices.
  • Leadership and team management skills with the ability to motivate in a fast-paced environment.
  • Excellent organizational, time management, and problem-solving abilities.
  • Experience with inventory management, cost control, and basic financial reporting.
  • Proficiency in bakery management software, POS systems, and Microsoft Office.
  • Ability to work early mornings, weekends, and holidays as needed.

Preferred Qualification:

  • Certification in food safety (ServSafe, HACCP) or baking (e.g., Retail Bakers of America).
  • Experience in wholesale, artisan, or large-scale bakery production.
  • Lean/Six Sigma or continuous improvement training.
  • Proven track record of increasing efficiency, reducing waste, or growing sales.
