We are seeking a disciplined, craft-focused Sous Chef to join the culinary leadership team at our ultra-luxury Japanese dining concept in Midtown Manhattan.
What You’ll Do
- Execute & Lead: Calmly run daily service and step in to lead the Omakase experience with extreme attention to detail when needed.
- Maintain the Standard: Ensure flawless execution, precision cutting, and immaculate handling of premium fish and seasonal ingredients.
- Manage Systems: Oversee back-of-house operations including prep volumes, strict sanitation protocols, mise en place, and food cost consistency.
- Mentor & Train: Hold a small, highly experienced team accountable to elite hospitality standards without the drama.
Who You Are
- An Omakase Experienced professional: You have genuine, hands-on experience in traditional Japanese cuisine and Omakase environments.
- A Grounded Leader: You lead by example, maintaining composure under pressure and communicating with clarity and respect.
- System-Oriented: You understand that true luxury relies on flawless backend organization, timing, and consistency.
- Locally Based: You are ideally already based in the NYC metro area and ready to commit to standard luxury hospitality schedules (including evenings, weekends, and holidays).
