ESSENTIAL JOB FUNCTIONS

  • Works with the Director of Culinary Experience, Dining Services Supervisor, and Quality & Compliance Consultants to ensure compliance with 42 CFR Part 483, Subpart B (Requirements for Long-Term Care Facilities), Title 22 regulations, Health Department requirements, and County Health standards.
  • Ensures an appropriate menu cycle is developed, implemented, and adjusted as necessary to meet resident needs.
  • Directs food preparation in accordance with production sheets, recipes, census requirements, and resident Food & Nutrition needs.
  • Orders, stocks, and maintains appropriate inventory levels of Food & Nutrition supplies.
  • Assists with special catering events and community functions.
  • Maintains standards of safety, sanitation, and cleanliness within the Culinary Department.
  • Addresses resident concerns received through the Resident Council or directly from residents.
  • Assesses each resident's Food & Nutrition needs and develops care plans in collaboration with the RAI process and Interdisciplinary Team (IDT).
  • Maintains familiarity with and follows the community Disaster Plan.
  • Conducts resident visits, completes nutritional screenings for each resident, and participates in weekly resident care planning and case management meetings with appropriate nursing staff.
  • Develops, prepares, and posts SNF/ALU kitchen work schedules and cleaning schedules.

  • Maintains attendance as outlined in Eskaton policy.
  • Follows required dress code and Eskaton's Community Appearance Standards. Maintains a professional image to the public and residents.
  • Works in accordance with established safety guidelines; uses proper body mechanics; follows safe work practices; wears appropriate safety gear.

Starting annual pay ranges from $70,304 to $85,000. Factors such as scope, responsibilities, experience, education, job-related skills, internal equity, and market considerations may influence base pay.

QUALIFICATIONS

Education:
AA degree in Food Service Management; Certified Dietary Manager and Serv Safe certifications required.

Training and Experience:
Minimum three to five years' experience overseeing a Skilled Nursing Food and Nutrition Department.

Knowledge and Abilities:
Must have working knowledge of food service preparation principles, sanitation and safety standards for institutional kitchens. Must have knowledge of good practices to avoid waste and misuse. Must have the ability to present foods in an attractive and palatable manner and to test quality of food by taste and smell. Must have knowledge of state, federal and county health food service regulations. Must be competent in care planning with regard to Food and Nutrition needs of residents and therapeutic nutrition. Must have knowledge and ability to operate all kitchen equipment and utensils safely, effectively, and efficiently. Must possesses a knowledge of quality assurance standards within a Food and Nutrition Department. Has the ability to organize, prioritize and supervise a staff and work with frequent interruptions and timelines. Possesses excellent verbal and written communication skills and mathematical skills for record keeping and proper ordering of food and supplies.
