Shift Schedule: First Shift (6:00am -2:30pm Sat – Thurs), Night Shift (4:00pm – 2:00am Sat -Thurs)

Job Summary:
We are recruiting an experienced Commercial Bakery Mixer / Dough Mixer for a large commercial bakery in Brooklyn, NY. This position is responsible for preparing and mixing dough for high-volume bread production by accurately reading production formulas, weighing and sequencing ingredients, and operating industrial mixing equipment, including Hobart, VMI, and similar automated or robotic mixing systems. The Mixer will monitor critical production parameters such as mixing time, cycle time, dough temperature, consistency, texture, and fermentation to ensure each batch meets established product and quality specifications. 
The ideal candidate will have hands-on experience mixing dough or pastries in a commercial or industrial bakery, a strong understanding of ingredient functions, dough consistency, mixing techniques, and basic fermentation, and the ability to perform production math involving weights, measurements, and formula scaling. Responsibilities also include maintaining accurate batch and traceability records, coordinating with production teams to maintain a continuous supply of dough, performing routine equipment inspections and cleaning, and following all GMP, food safety, safety, sanitation, and Kosher requirements. 
 
 
Key Responsibilities (including but not limited to):
  • Formula Execution & Staging: Read and verify production orders/formulas; accurately weigh and sequence ingredients (manual and bulk) using scales, ensuring proper handling of raw materials like flour and yeast. 
  • Equipment & Mixing Operations: Operate industrial, automated, and robotic mixing systems (e.g., Hobart, VMI) to achieve desired dough consistency, texture, and temperature. 
  • Quality & Process Control: Monitor and input mixing parameters (mix time, cycle time, dough temperature). Perform sensory evaluations, monitor fermentation progress, and adjust parameters as needed. 
  • Line Coordination & Supply: Maintain close communication with line leads and production supervisors to ensure a continuous, properly timed supply of dough to meet production throughput demands. 
  • Compliance & Traceability: Maintain accurate, detailed batch records for quality assurance and traceability. Follow all GMP, food safety, safety protocols, and Kosher guidelines. 
  • Sanitation & Maintenance: Refill ingredient bins, perform routine equipment inspections/cleaning cycles, and maintain a clean work space. Report any mechanical issues to maintenance—do not attempt complex repairs. 
Requirements & Qualifications
  • Hands-on experience mixing dough/pastries in a commercial or industrial bakery environment. 
  • Strong understanding of dough consistency, mixing techniques, ingredient functions, and basic fermentation. 
  • Ability to read English and perform basic production math (weights, measurements, unit scaling). 
  • Experience with commercial mixers (Hobart, VMI, or similar automated/robotic systems). 
  • High attention to detail, strong communication skills, basic computer literacy, and ability to follow precise written/verbal instructions. 
Physical Requirements
  • Ability to stand, lift, and work in a fastpaced environment.
  • Able to lift up to 50 lbs as needed.
  • Ability to perform repetitive motions throughout a shift.
