Assistant Managers work 7AM-5PM.  Among the most important tasks of the Assistant Manager are: Greeting staff, checking emails, double-checking pre-orders, checking spam for discarded messages, problems, comments, etc. and  checking voicemail (if applicable).  The manager helps in stations that need attention because they are experiencing a press or a staff member needs a break.

When things slow down, after people have breaks, the Manager will: write checks; talk with suppliers; answer emails for donations; take care of order lists and ordering; quality check food; quality of work checks; cultivate and teach staff; check cleanliness of the whole restaurant including restrooms and trash; check tidiness of beverage area; stock; daily check of temperatures of fridge; daily check of equipment maintenance.  The manager makes sure equipment is in working order BEFORE the weekend.  At closing, the manager also: Counts the register; makes deposits and change; checks emails; emails accountant; checks doors; checks outside premises; sets alarm; turns out lights.  The manager is the last one in the building.
