Sodexo Universities has an opportunity for an Executive Chef at University of Maine in Presque Isle, Maine. This is a small University that feeds approx. 1,000 students daily.

As Executive Chef, you will oversee all aspects of culinary operations on campus to include the dining hall and catering and retail food services.  The Executive Chef will work closely with the hourly staff as well as student committees on campus and must have knowledge of sustainable foods, including seasonal and local foods.

 

The ideal candidate will have:

  • Knowledge of sustainability, have experience with purchasing, menu planning and development to include cycle menus.
  • Experience with Online systems of Food Management, Labor Management preferred (Sodexo systems of FMS, LMS, and UFS).
  • Strong culinary and BOH leadership – manage and mentor kitchen staff: Food Safety focus a must with Training in HACCP.
  • Successful Catering/Banquet experience essential to help grow new catering business and to elevate catering services for across campus.

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a small account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

 

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree Basic Management Experience - 1 year Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
