Job Summary:

Under the direction of the Executive Chef, manages the production of the Culinary Medicine Program food services. Orders and receives products, maintains kitchen sanitation and ensures standards are maintained. Teaches Culinary Medicine patients and participants.

Responsibilities:

* Manages production of Culinary Medicine food services and the related purchases of product, including food products, beverages, chemicals, paper products, etc.

* Maintains records of purchases for food cost reporting and submits to Executive Chef.

* Maintains responsive service to Culinary Medicine patient and participant needs and requirements.

* Coordinates menus and menu changes with Executive Check and Dietitian.

* Insures storage of goods complies with health codes, HACCP safety measures and Cleveland Clinic policies.

* Consults with Executive Chef on all product specifications, reviews amounts ordered, and copies all order transactions with Executive Chef.

* Coordinates with Executive Chef to brief Culinary Medicine staff as required about culinary curriculum details and insures active communication with staff to coordinate timing of teaching and participant food service.

* Contacts Executive Chef with any changes in session events.

* Insures cleanliness and standards of the Culinary Medicine teaching kitchen and compliance with ServSafe/HACCP safety measure for food production areas.

* Informs Executive Chef of any maintenance needs for the kitchen interior/exterior.

* Participates and apprentices with Executive Chef on Culinary Medicine training initiatives, innovation, recipes, marketing, research and development.

* Other duties as assigned.

Education:

* Completion of or enrolled in a recognized course of study in the culinary arts.

* In-depth knowledge of culinary techniques, food production methods, processes, systems and quality standards.

* Bachelor's degree withing one year.

Certifications:

* Certification or in process of obtaining completion in ServSafe/HACCP(Hazard Analysis Critical Control Points) within one year.

* Certified Culinarian (CC) or Certified Sous Chef (CSC) or Certified Chef de Cuisine (CCC) or Certified Executive Chef (CEC) or Certified Culinary Educator (CCE) through the ACF(American Culinary Federation).

* Certification is recommended to be a Culinary Medicine chef instructor.

Work Experience:

* Minimum of 2 years in a professional kitchen, preferably with certified culinarians.

* Good organizational skills with attention to detail.

* Good written and verbal communication skills necessary to interface with internal and external customers at all levels.

Physical Requirements:

* Extensive standing, walking, and lifting up to 50 pounds.

* Required to work in fluctuating temperatures.

* Requires ability to load, transport, set up and assist in off-site cooking demonstrations as required.

* Dexterity for knife handling, cooking and food preparation and computer operation.

Personal Protective Equipment:

* Follows standard precautions using personal protective equipment as required.
