Job Description

The Line Cook prepares delicious and eye- catching meals for our guest under the direction of the Executive Chef. They are responsible for guest satisfaction that focuses on food appearance, high quality of the food and the overall dining experience. The Line Cook is responsible for the daily preparation of food items in the pantry, fry station and other areas of the kitchen. They will prepare food items in accordance with menus, production requirements and quality standards while maintaining a safe and sanitary work environment. They will strive to model the Pursell Farms core values in the completion of their work.

ESSENTIAL JOB FUNCTION:

  • Prepare food of consistent quality following recipes, use records, production and portion standards per order specs
  • Start food items that are prepared ahead of time making sure not to prepare more than the estimated amounts
  • Acknowledge all multiple orders and assemble them to the order
  • Date all food containers and rotate as per the standard operating procedures, making super all perishable are kept at proper room temperatures
  • Check pars for shift use, determine necessary preparation, freezer pull and line set up
  • Make note of any out of stock items or possible shortages.
  • Return all food items not used on the next shift to the designated storage areas being sure to cover and ate all perishables
  • Assist in setting up plans and actions to correct any food cost problems, control food waste, loss and usage
  • Perform other duties as directed by Supervisor Education:
  • DESIRED SKILLS AND QUALIFICATIONS:
  • High school graduate or equivalent GED required
  • Culinary school degree or certificate preferredSkills and Abilities:
  • Knowledge of operating industrial sized ovens and ranges
  • Knowledge of preparation of various cuisines, relishes, soups and salads
  • Basic understanding and skill in knife handling skills
  • Understanding and knowledge of safety, sanitation and food handling procedures
  • Excellent hand/eye coordination to control knobs and buttons, grasp utensils, plates, pots and other items as well as carry containers, pans and dishes
  • Able to read, speak and understand English
  • Ability to stand for long periods of time
  • Ability to communicate with guests, co-workers and management
  • Ability to adapt and work well under pressure
