Position: Sous Chef

Department: Mountain Springs Buffet/F&B

Wage: 55,000/yr.

 

POSITION SUMMARY:  Responsible for the preparation of all foods and sauces in accordance with CCCH specifications and standards; directing line and prep cooks work assignments, and maintaining order and cleanliness within the food prep areas during assigned shift.

ESSENTIAL DUTIES:

·         Plan, prepare, season, finish, garnish all food in accordance with CCCH recipes and standards.

·         Supervise all food production staff ensuring compliance with CCCH and all other governing agencies’ policies, procedures, controls, specifications, and safety standards to ensure efficient kitchen operations.

·         Monitor and maintain all checklists and HAACP temperature readings.

·         Ensure proper and safe food storage, labeling, and rotation.

·         Promote and participate in creating a teaching environment for all food production and kitchen staff.

·         Build and maintain partnering relationships with colleagues and vendors while demonstrating leadership and integrity and promoting team success.

QUALIFICATIONS:

1.     Education: 

a.     High school diploma or equivalent, required.

b.    One-year certificate from college or technical school in culinary studies, required.

c.     A combination of experience and schooling may substitute for educational requirements.

2.     Work Experience:

a.     Minimum 3 years’ experience in Sous Chef role, required.

3.     Knowledge, Skills, and Abilities:

a.     Possess strong organizational skills, ability to plan large/detailed projects.

b.    Possess excellent communication skills (written and verbal).

c.     Able to read, write, and speak fluently in the English language. Bilingual in Spanish language a plus.

d.    Be computer literate with various operating systems.

e.     Be knowledgeable about flavor profiles, seasonings and spices, food pairings, and be able to create recipes.

f.      Able to maintain professional composure in fast-paced, rapidly changing environment while motivating and leading a team in successful operations.

4.     Professional Licenses & Certifications Requirements:

a.     Have or be able to obtain food safety certifications upon hire.

5.     Be at least 18 years of age.

6.     Participate and pass pre-employment drug screening and background investigation to obtain and maintain a valid Gaming License.
