The Director of Food and Beverage is responsible for managing the daily operations of the restaurant and banquets. This includes maintaining established quality and service standards, controlling expenses, maximizing profits, and ensuring sanitation, safety and food quality. The Director of Food and Beverage supervises the dining room and banquet functions and directs staff activities to ensure the prompt and accurate seating and service of all guests.

Your responsibilities will include:

- Managing the staffing, training and day-to-day activities of the banquets, restaurant and bar staff. You will need to ensure that staff is scheduled based on forecasted business.
- Assisting the Executive Chef in reviewing the presentation of food products and addressing any concerns raised by guests or staff.
- Working closely with the Catering Sales Manager to ensure smooth execution of events and banquets. Attend BEO Meetings.
- Supporting team goals and measuring effectiveness through the Food & Beverage profit and service performance of the hotel, while ensuring that all goals are geared towards exceeding guest expectations.
- Selecting, training and developing personnel within the department, planning, assigning and directing work, appraising performance, rewarding and disciplining employees. You will also be responsible for safety, addressing complaints and resolving problems.
- Implementing and managing all compliance programs to ensure SOP compliance, safety and sanitary regulations, and all federal, state and local & brand (if applicable) regulations are met to provide optimal levels of quality service and hospitality to guests.
- Marketing the Food and Beverage outlets and developing and managing the implementation of menus, package deals, promotions, displays, decorations and presentations while following branding guidelines. You will also need to analyze market trends and implement strategies to improve patronage.
- Developing, recommending, implementing, and managing the department’s annual budget, business/marketing plan, forecasts and objectives to meet/exceed management expectations.
- Monitoring and following up on all Food and Beverage cash overages and shortages.
- Reviewing F&B staff’s worked hours for payroll and submitting it timely.
- Preparing employee shift schedules according to the business forecast, payroll budget guidelines and productivity requirements.
- Ensuring all food and beverage costs are maintained to meet budget and are closely monitored at all times.


Qualifications and Requirements:

High School diploma /Secondary qualification or equivalent.

Experience with Marriott processes and standards.
