BASIC FUNCTION (the primary purpose of this position):

The primary function of the Expeditor is to increase the speed and efficiency of food delivery from the kitchen to the dining guest. A secondary function is to monitor quality assurance and plate presentation of each food item served.

PRINCIPAL ACTIVITIES & RESPONSIBILITIES:

  • Promote a clean, safe, healthy and friendly work environment for employees and guests; report and direct safety issues to Safety Committee.
  • Act as main point of contact and communication between culinary and service staff during service.
  • Inspect quality and consistency of all food products and plate presentation and request a re-fire on items that do not meet the specifications set by management.
  • Effectively communicate with the FOH for service excellence, ie. all menu items not available, changes, specials, timing.
  • Prepare trays for table service following established procedures. Place all necessary sides, condiments, extra plates, and service ware on the tray. Position plates on the tray according to "Pivot Point" and assigning the next available server/server assistant to run food to guests as soon as the order is ready.
  • Maintain complete knowledge of all menu items, preparation method/time, quality standards, garnish and method of presentation.
  • During breakfast rushes the expeditor is responsible for producing toast, bagels etc, for corresponding menu items being requested by wait staff for guest orders
  • Consistently follow sequence of service utilizing all proper procedures standardized by the management.
  • Occasionally assist in pouring waters, serve breads, condiments and some side-items as necessary.
  • Stack and stock of side stations, with dry goods, extra-china settings and silverware.
  • Set up and break down of kitchen serving side stations before and after service.
  • Monitor firing times to ensure orders are prepared in a timely manner. Call out ticket times to the cooks constantly to ensure target ticket times are met. Notify supervisor of any long ticket times.
  • May perform line cooks duties if needed.
  • Responsible for the upkeep and cleaning of wait staff side of hot line.
  • Has the authority to reject food prepared by cooks that is not cooked as specified or fails to meet established standards.
  • Has the authority to direct available service staff to run food orders.
  • Walk through and wipe down EDR once an hour
  • Complete closing side duties as assigned.
  • Other duties as assigned.

POSITION REQUIREMENTS (objective educational or technical training required; skills; and years of experience):

  • HS diploma or GED. Some formal food / culinary training helpful.
  • Food handler's card required at or upon employment.
  • Minimum 12 months prior food service or related experience is required. Experience in a high volume restaurant a plus.
  • Knowledge of food service techniques, food and menu, and health and safety regulations.
  • Prior hospitality experience with proven customer service skills.
  • Ability to follow written and oral instructions from varied sources.
  • Must pass and remain in compliance with Coquille Gaming Commission background check and drug free work place policies.

Ability to work weekends, holidays and evening hours as business demands. While performing duties of this position, employee is required to stand for extended periods, and frequently walk, and use hands to; finger, handle, or feel objects, tools, or controls. Occasionally sit. Have the ability to manage stress appropriately, make decisions under pressure, and manage anger, fear, hostility and violence of others appropriately. The casino work environment may expose you to second hand smoke on a regular basis.
